Easy and Delicious Banana Bread

Have you ever wondered what to do with the last one or two bananas that no one will eat because it is “to ripe”?  My mom taught me to just throw them in the freezer and use them for a recipe!  One of her favorite things to make with the over ripe, frozen banana was Banana Nut Bread.  It’s almost like I can smell it fresh out of the oven as I write this.

In need of something else to offer for breakfast in my house, something that is not filled with sugar and additives, or comes in a box, I decided to ask my daughter to help me make some Banana Nut Bread.  This took no convincing since she loves to help me in the kitchen.

As soon as we had our plan we took the bananas out of the freezer so they would have a chance to unthaw, which would allow the banana to mix into the batter much easier.  I know…they don’t look pretty!! If I recall I think I heard her squeal “EWWWWW”.  But trust me they have the same flavor and mix well!

Get your ingrediants ready:

4 ripe bananas
1/4 cup melted butter
1 cup sugar
1 1/2 cups flour
1/4 teaspoon salt
1 egg beaten
1 teaspoon baking soda
Ghirardelli 60% Bittersweet Chocolate Baking Chips

Preheat oven to 350°F. Spray a 9×5 loaf pan with non-stick spray, set aside.
Mash the bananas in a bowl.
Add all the remaining ingredients and mix well with a wooden spoon. (Add more chocolate chips and walnuts to batter, if you want more that what is going on top.)

While I am mixing all of the ingrediants I keep my daughter busy with smashing the walnuts.  This job can be done much easier if you have a chopper, but honestly she is my chopper.  So I give her a bag filled with walnuts and let her smash them on her own.  They are a touch more coarse this way, but our family likes them that way.

Pour the mixture into a Stoneware bread pan from Pampered Chef (I am obssessed with their Stoneware products) then add chocolate chips and nuts on top. Bake 55 to 60 minutes, or until a toothpick stuck into the bread comes out clean.

In no time at all your home will smell amazing and you can enjoy a delicious homemade treat!
