It’s lunchtime… what to eat? The kids are happy with their PB&J, but you’re looking for something a little more exciting. And if it’s healthy, that’s an added bonus.
My sister passed along a recipe for Sweet Potato and Chickpea Salad on to me a few weeks ago, and WOW, it’s my new favorite. The combination of chick peas, roasted sweet potatoes, parsley, lemon and spices, although unexpected, satisfies my hunger and makes me feel like I’m eating clean, simple food that’s good for me.
I used this recipe, but made a few modifications: I didn’t add onion or garlic, and I roasted the sweet potato in a 400-degree oven for about a half hour instead of cooking it on the stovetop.
Give it a try next time you’re in a serious lunch rut! It would also make a great side dish for dinner.
